Ingredients
- 4 cups packed stinging nettle tops
- 1 medium onion
- 1 large potato
- 4 cups broth
- to taste salt and pepper
Steps
- Wear gloves; wash nettle tops.
- Blanch nettles 1–2 minutes; drain (sting is neutralized).
- Sauté onion; add potato and broth; simmer until tender.
- Add nettles; blend until smooth; season and serve.
